Fruit Salsa

I hadn't made a fruit salsa in a long time, but this stuff came out pretty good and topped off my fish tacos last week.

  • 1 ripe Mango diced
  • 1 red bell pepper, diced
  • Half a large cucumber, peeled and diced
  • Half a red onion, diced
  • 1/4 cup cilantro leaves, minced
  • 2 cloves crushed garlic
  • 2 tablespoons lime juice
  • 2 tablespoons apple cider vinegar
  • Salt to taste

After being mixed, mine had a good bit of excess liquid that I just strained off before serving. Maybe it was because I didn't seed the cucumber.
